Kombucha

Kombucha is s kind of beverage fermented from tea by SCOBY (symbiotic Culture of Bacteria and Yeast). Many kinds of leaves can be used as a substrate for making kombucha, such as tea leaves, coffee leaves, or anything that contain high levels of phenolic compounds. This books aims to introduce Kombucha to the public and provide basic knowledge about the process of making Kombucha.
